Vincent Paolantonacci's manufacturing workshop has been located in the heart of the village of Azilone since 1992, his charcuterie has been AOP certified since 2012.

A story that is written from father to son in Taravo: "I took over from my father, who already raised cows, goats and sheep in the commune of Azilone-Ampaza. I decided to devote myself to pigs and cattle,” says Vincent. Today, he raises a very fine herd of 500 Corsican pigs.
Taravo is an agricultural region populated by numerous oak and chestnut groves. It is famous for its pork and charcuterie. “Our farm covers more than 500 ha. The pigs feed on chestnuts and acorns that they find on their range.”
The son Joseph learns the father's trade. Already involved in the family business, he will in turn have to continue the tradition.
