BREWERY-HONEY-SAFFRON FARM IN BOCCA IN THE VILLAGE OF COZZANO (UPPER TARAVO)
Sylvain Martinez-Ceccaldi sets up as an organic farmer and begins growing mountain saffron, the quality of which he wants to guarantee is impeccable.
“Here, we are in the mountains and our products must reflect this typicality,” underlines the saffron grower who is clearly not short of ideas to develop his operation in Haut-Taravu and explore all the potential of this spice which goes so well with goes well with Corsican citrus fruits, teas, and honeys from his partner (Maria Ghjuvanna Colombani).
Maria Ghjuvanna Colombani, for her part, follows a quality approach and produces several types of AOP honey. Guided by her love of good cooking, she developed a range of original products at the Bocca farm: honey vinegars, honey jams, muesli, biscuits… “With Sylvain, we share the same passion for our profession and interaction happened naturally between my honey and its saffron,” confides Maria Ghjuvanna.
Return to the original simplicity of beer: a single malt, a single hop, a single spring water.
The water comes from the spring called “Petra d’Eva” (the stone of Eve), which springs at an altitude of more than 1340 m under the granite ridges covered by the GR20. Its natural quality brings purity and freshness, for a true “back to basics”.
