Rotolu (U Rotolu in Corsica) is a cheese made from raw sheep's milk, soft cheese and flowery rinds. It is produced in Corsica by Sylvie Brunelli of Bergerie U Rotolu.
Located on the hill of Rotolo, a few kilometers from the coastal town of Porticcio, cheesemaker Jean-François Brunelli perpetuates the tradition he learned from his mother who worked on the farm for half a century and passes on his passion to his companion Sylvie.
Although she started making cheese only a year ago, the shepherdess won two gold and silver medals in international competitions organized in Tours and Lyon in 2023.
